1 HEARTY VEGETABLE SOUP WITH ALL THE TRIMMINGS

Easy
Serves 2–4
Prep time: 16 minutes
Cooking time: 35 minutes

INGREDIENTS

  • 600 g Woolworths Hearty Vegetable Soup Mix 
  • 1 T canola oil 
  • 750 ml chicken or vegetable stock 
  • 2 T butter 
  • 2 T pumpkin seeds, toasted 
  • Sage leaves, deep fried 
  • Basil leaves, to serve 
  • 3 T Woolworths Roast Red Pepper Pesto 
  • 60 g Woolworths Garlic & Herb Croutons 
  • Salt and freshly ground black pepper, to taste 

METHOD

  1. Prepare the soup as per packaging instructions.
  2. Season to taste. Stir butter through while hot.
  3. Serve topped with pumpkin seeds, deep-fried sage, basil leaves, red pepper pesto and croutons.

Cook's tip: serve with toasted cheese sandwiches.

2 LUXURY SPLIT PEA SOUP

Serves 2–4
Prep time: 15 minutes
Cooking time: 35 minutes

INGREDIENTS

  • 750 g Woolworths Split Pea Soup Mix 
  • 1 T canola oil 
  • 115 ml chicken or vegetable stock
  • 100 g petits pois 
  • 80 g mange tout 
  • 4 kale leaves, deep fried 
  • 35 g Woolworths Nut & Seed Sprinkle 
  • 80 g Serrano ham 
  • 3 T basil pesto 
  • 4 T crème fraiche 
  • 50 g Parmesan 
  • Salt and freshly ground black pepper 

METHOD

  1. Prepare the soup as per packaging instructions. Season.
  2. 2. Serve topped with petit pois, mange tout, kale leaves, nut and seed sprinkle, crispy Serrano, basil pesto, crème fraîche and Parmesan.

Cook's tip: serve with crispy toast topped with Parmesan.
