Flavoured butter is great with a variety of grilled meats and a number of flavours can be whipped into butter at room temperature: blue cheese works well with ostrich steaks, fresh berries are great with chicken and anchovy fillets or ginger are delicious on chicken or pork.

Tarragon or other fresh herbs, Tabasco, beetroot, asparagus, mushroom or classics such as garlic and chopped parsley are other great options.
