Easiest-ever salmon burritos
Trust us when we say you’re going to want to try these salmon burritos and that cheesy, spicy corn salad on the side. And if salmon’s not your game, beef or chicken mince will go down just as well!
For the burritos:
Ingredients:
- 400 g Woolworths Frozen Norwegian Salmon Portions
- 2 T olive oil
- 100 g butter
- 2 T Woolworths Enchilada Spice or Mexican Spice
- 4–8 Woolworths Mini White Flour Wraps
- 200 g Woolworths Exotic Tomatoes, sliced
To serve:
- Pink pickled onion petals
- Fresh coriander
- Brussels sprouts or baby cabbage with lemon, sliced chillies and olive oil
- Limes or lemons
Method:
- Cook the salmon according to package instructions, rinse with warm water and fry in a pan until lightly seared on each side.
- Add a sprinkle of enchilada spice for flavour.
- Set aside and serve with toasted wraps, fresh coriander, sliced cabbage and Mexican-inspired corn.
Mexican-inspired spiced corn:
Ingredients:
- 1 x 9 pack Woolworths Mini Corn Cobs
- 60 g grated hard cheese
- 250 g crème fraiche or sour cream
- Sea salt and freshly ground black pepper, to taste
- 1 T Woolworths Enchilada or Mexican Spice
- Fresh coriander and sliced spring onion, to serve
Method:
- Chargrill the corn until tender (or steam and grill quickly in a griddle pan).
- Fold half of the grated cheese into the crème fraîche or sour cream and season to taste.
- Add a little Mexican spice and a squeeze of lemon or lime juice or olive oil.
- Roll the corn in the cheesy crème fraîche, sprinkle with more Mexican spice and sprinkle with spring onion and coriander.
