Tropical mango and coconut smoothie

This smoothie is instant sunshine in a glass, its perfect for lazy days chilling in the sun, and is also luxurious enough to enjoy as a dessert.

Preparation time: 10 minutes

Cooking time: 1 minute

Ingredients:

  • 1 x 400 ml Woolworths Asian Coconut Cream, plus ½ cup extra for whipping
  • 2 Woolworths Ripe & Ready Mangoes, peeled and cut into cubes
  • 1 lime, zested and juiced
  • 2 T Woolworths Honey, to garnish
  • 3 T Woolworths Desiccated Coconut, toasted

Method:

  1. Pour the coconut cream into ice cube trays and freeze until frozen solid.
  2. Once frozen, add them to a blender along with the mango, lime zest and juice.
  3. Blend until smooth, combining the frozen coconut cream into the mango. If the mixture seems too thick, simply add 1T of water at a time, until the desired texture is reached.
  4. Drizzle some honey along the inside of your glass before pouring in the mango smoothie. Top with coconut cream that has been whipped until thick and fluffy in texture.
  5. Garnish with toasted coconut and a lime wheel before serving.
