The one and only peppercorn sauce recipe

Preparation time: 10 minutes

Cooking time: 20 minutes

Ingredients:

  • 1 Woolworths Thick Cut Rump Steak
  • 2 T – 3 T peppercorns, ground
  • 4 garlic cloves, thinly sliced
  • 250 ml Woolworths Sour Cream
  • 3 sprigs thyme
  • 1 red onion finely chopped
  • 2/3 cup sherry or brandy (optional)
  • 1 ½ cup Woolworths Whipping Cream
  • 1 T Dijon mustard
  • Sea salt

Cooking instructions:

  1. Heat a pan and add garlic cloves, onion, thyme and butter with oil and gently soften for about 15 minutes on a low heat, but do not brown. If you want to add brandy or sherry at this stage, remove from the heat and add the sherry or brandy and place over a medium heat and cook for about 1 – 2 minutes until the brandy evaporates and the spoon leaves streaks in the pan while stirring.
  2. Add cream and bring to a simmer, cook for about 1 minute until sauce coats the spoon, season with salt and stir in your mustard to serve. Braai your steak over the coals to your liking and allow to rest before slicing and serving with your peppercorn sauce. Delicious with coal-baked potatoes and summer salad.
