The best ever lamingtons for Mother’s Day

Preparation time: 15 minutes plus setting time
Cooking time: 2 minutes

Ingredients:

  • 2 x Woolworths Madeira Butter Cake Loaf
  • 200 g Woolworths White Chocolate Drops
  • 2/3 cup Woolworths Whipping Cream
  • 100 g Woolworths Desiccated Coconut
  • Woolworths Beetroot Powder

Method:

  1. Melt the chocolate in the microwave for about 1 minute, in 30-second blasts, until melted and smooth. To make your ganache, add the cream and mix until smooth.
  2. Add ½ teaspoon of beetroot powder and mix vigorously to make a pink chocolate ganache icing.
  3. Sieve the chocolate through a fine sieve to get rid of any lumps of beetroot powder. 
  4. Portion your cake into 8 neat blocks and snack on the scraps (chef’s perk).
  5. Use a fork to dip and coat a block of cake in the pink chocolate then into the coconut. Add a little beetroot powder to your coconut to get a pretty pink covering if you like. 
  6. Once coated in coconut, place on a cooling rack to set for 1 hour in a cool dry place.
  7. Should the chocolate sets up a little whilst working with it – zap it in the microwave for 10 seconds to loosen it up.
