Smoked chicken and teriyaki noodles with gochujang cucumber salad

Forget take aways as your only loadshedding dinner solution, this vibrant noodle dish used already cooked, smoked chicken and gets a fiery kick from the gochujang marinaded cucumbers, and because Woolies Fresh Soy Ramen Noodles don’t need to be cooked, we’re cruising to a 100% no-cook dinner. 

Smoked chicken and teriyaki noodles with gochujang cucumber salad

Ingredients:

For the gochujang cucumber salad:

  • 2 T Woolworths Gochujang Paste
  • 4 T Woolworths Rice Wine Vinegar 
  • 2 spring onion stalks, roughly chopped
  • 1 Woolworths Mediterranean Cucumber, sliced
  • 1 red pepper, thinly sliced into strips
  • 200 g Woolworths Sugar Snap Peas, finely sliced into strips
  • 2 free range smoked chicken breasts, sliced
  • 4 T Woolworths Asian Japanese Teriyaki Glaze
  • 2 x 250 g Woolworths Fresh Soy Ramen Noodles
  • 2 spring onion stalks, thinly sliced 6009000998168
  • Fresh coriander to garnish 20099268

Cooking instructions:

  1. For the cucumber salad combine the gochujang paste with rice wine vinegar and spring onions. Add the cucumbers and mix well, setting aside to marinate. 
  2. In a large mixing bowl add the red peppers, sugar snap peas, smoked chicken and the teriyaki glaze. Add the noodles and toss together using 2 wooden spoons until well combined. 
  3. Dish into serving bowls along with some cucumber salad. Finish with extra spring onions and fresh coriander.
