Smoked chicken and teriyaki noodles with gochujang cucumber salad

Ingredients:
For the gochujang cucumber salad:
- 2 T Woolworths Gochujang Paste
- 4 T Woolworths Rice Wine Vinegar
- 2 spring onion stalks, roughly chopped
- 1 Woolworths Mediterranean Cucumber, sliced
- 1 red pepper, thinly sliced into strips
- 200 g Woolworths Sugar Snap Peas, finely sliced into strips
- 2 free range smoked chicken breasts, sliced
- 4 T Woolworths Asian Japanese Teriyaki Glaze
- 2 x 250 g Woolworths Fresh Soy Ramen Noodles
- 2 spring onion stalks, thinly sliced 6009000998168
- Fresh coriander to garnish 20099268
Cooking instructions:
- For the cucumber salad combine the gochujang paste with rice wine vinegar and spring onions. Add the cucumbers and mix well, setting aside to marinate.
- In a large mixing bowl add the red peppers, sugar snap peas, smoked chicken and the teriyaki glaze. Add the noodles and toss together using 2 wooden spoons until well combined.
- Dish into serving bowls along with some cucumber salad. Finish with extra spring onions and fresh coriander.
