Mortadella-and-soft goat’s cheese dip

P.S. Mortadella is a delicately spiced Italian cold cut — think melt-in-your-mouth flavour with a whisper of pepper and pistachio.

Ingredients:
- 2 T olive oil, plus extra for serving
- 100 g Woolworths mortadella, thinly sliced
- 4 T capers, drained on kitchen paper
- 175 g tub Woolworths soft goat’s cheese
- 4 T gherkins, finely chopped
- freshly ground black pepper, to taste
- ciabatta, warmed, for serving
Cooking instructions:
1. Heat the olive oil in a small pan and add the mortadella. Fry until crispy, stirring occasionally, about 5–7 minutes. Drain on kitchen paper.
2. Add the capers to the hot pan and flash-fry the capers for 1–2 minutes, then drain on kitchen paper.
3. Spread goat’s cheese onto a dinner plate and top with the crispy mortadella, capers and the chopped gherkins.
4. Drizzle with olive oil, season with black pepper and serve with the warm, crusty bread.
