Leftover Lettuce Pakoras
We all know that pakora’s are delicious, but have you tried making them with lettuce? This is a great way to use up those leftover salads lurking in your fridge.

Preparation time: 10 minutes
Cooking time: 30 minutes
Ingredients:
- 1 x 144 g Woolworths Chilli Bite Mix
- 1 medium potato, boiled and mashed
- 2 x Woolworths XL Free Range Eggs, whisked
- 1 T garam masala
- 1 t cumin seeds
- 1 t Woolworths Crushed Turmeric
- Salt, to taste
- 2 cups leftover iceberg lettuce, shredded
- Oil for frying
To serve:
- 1 cup Woolworths Double Cream Plain Yoghurt
- 2 T Woolworths Chilli Crunch
- Mint leaves
Cooking instructions:
- Make the chilli bite mix according to package instructions, replacing the water with whisked eggs.
- Add the spices to the batter, season to taste and stir in the shredded lettuce.
- Heat the frying oil in a heavy-based pot over medium heat. To see if you are ready to fry, drop a small amount of the batter in the hot oil. If it sizzles, you are good to go.
- Carefully, place spoonfuls of batter in the oil and fry until golden brown on both sides.
- Place on paper towel and season with salt.
- Serve hot with Woolworths Double Cream Plain Yoghurt and Woolworths Chilli Crunch, topped with mint leaves.
