Italian-style cannellini beans with frikkadels

Ingredients:

  • 1 x 400 g can cannellini beans
  • 125 g punnet Woolworths basil pesto
  • 100 g Woolworths deli chargrilled marinated artichokes
  • 600 g Woolworths lamb frikkadels
  • 1 T olive oil

Method:

  1. Drain and rinse 1 x 400 g can cannellini beans. Toss the beans with half 125 g punnet Woolworths basil pesto. Scatter over 100 g Woolworths deli chargrilled marinated artichokes. Season to taste before serving.
  2. Brown 600 g Woolworths lamb frikkadels in 1 T olive oil in a pan. Finish off in the oven at 180°C for 10–15 minutes, or until cooked through. 
  3. Serve warm with the Italian-inspired salad and garnish with fresh basil.
