How to make the ultimate roast potatoes like a pro to go with your Woolworths Christmas lamb or chicken roast with all of the trimmings.
Roast potatoes like a pro

Ingredients:
- Woolworths Sea Salt, to taste
- Woolworths Everyday Medium Potatoes, peeled and halved
- Woolworths Mediterranean Extra Virgin Olive Oil, to drizzle
- 1 x Woolworths Tuscan Rub Chicken Roast with a Butter Brine-Based Blend
- 1 x Woolworths Easy to Cook Free Range Deboned Leg of Lamb with Rosemary & Garlic
- 500 ml Woolworths Christmas Festive Gravy
- 2 x 230g bags Woolworths Tenderstem® Broccoli
- 1 head of garlic, cut in half
- Lemons, halved

- Cut into even-sized pieces for even cooking
- Drain and fluff while still hot for the perfect crunchy crust
- Don't crowd the baking trays
- Don't be afraid of high heat and time – they need time to get delicious
- Use good olive oil, thyme and salt
- Roast at 220C°
- Season the potatoes well
Cooking instructions:
- Bring a large saucepan of water to the boil. Add a generous pinch of salt, about 1.5 t. Gently simmer the potatoes (don’t boil) for 15 minutes until almost cooked – the tip of a knife should pierce the potato but not break it. Use two saucepans if necessary. Drain the potatoes and add back to the warm pot with 2–3 T olive oil, replace the lid and shake while warm to rough up the edges.
- Preheat the oven to 220°C. Arrange on a baking tray or two, so you don’t overcrowd the potatoes, drizzle with some more olive oil and season with salt.
- Roast for 1 hour to an hour and 15 minutes turning every 20 minutes to create a crust. Taste your potatoes and add more seasoning while still warm, if needed. Alternatively buy Woolworths 1 kg frozen roast potatoes and cook to packaging instructions. Roast your lamb and chicken according to package instructions and serve with broccoli and Woolworths Christmas gravy.
