Green potato salad

Use Woolies Nicola Potatoes to make this easy Green Potato Salad.

Green Potato Salad

Easy 
Serves: 4-6

Cooking time: 20 minutes

Ingredients:

  • 700 g Woolworths Small Nicola Potatoes
  • 2 T Salt 
  • 1 Woolworths Mediterranean Cucumber, cut into batons
  • 2 stalks Woolworths Loose Fresh Celery, chopped
  • 125 g Woolworths Green Beans, halved
  • 125 g Woolworths Tenderstem®
    Broccoli, halved
  • 110 g Woolworths Shelled Edamame Legumes

Dressing:

  • 2 T Woolworths Basil Pesto
  • 1 cup Woolworths Double Cream Plain Yoghurt
  • 200 g Woolworths Freshly Smashed Plain Avo
  • Lemon juice to taste 

To Serve:

  • 4 Woolworths Free Range Eggs, boiled
  • Woolworths Capers
  • Chopped Chives 

Cooking instructions:

  1. Fill a large saucepan with water and add the potatoes and salt. Bring to a boil and cook for 10 - 15 minutes, or until the potatoes are tender. Drain and set aside to cool, then cut in half. 
  2. Blanch the broccoli and beans in boiling water and set aside to cool. Mix all the dressing ingredients together. 
  3. Toss all the salad ingredients together with the dressing. Top with the boiled eggs, capers, and chopped chives.
