Glühwein-and-cherry-glazed gammon

Ingredients:
- 1 Woolworths ready-to-cook gammon
- 1 x 750 ml bottle Woolworths Fireside Glühwein
- 2 Woolworths cinnamon sticks
- 2 star anise
- 10 green peppercorns
- 4 green cardamom pods
- 1 orange, halved
- 200 g Woolworths light brown sugar
- 5 T Woolworths fynbos honey
- 180 g Woolworths cherries, pitted and halved
Cooking instructions:
- Place the gammon in a large saucepan filled with water, ensuring it’s completely submerged. Bring the water to a gentle boil, then cook for 30 minutes for every 500 g the gammon weighs. While the gammon is cooking, prepare the glaze.
- Pour the glühwein into a large saucepan and add the cinnamon, star anise, peppercorns, cardamom, orange halves, sugar and honey.
- Place the pan over a medium heat and slowly reduce until a thin syrup forms, this will take between 20–30 minutes.
- Add the cherries to the glaze and gently fold through, taking care not to break them up.
- Remove the gammon from the pan and allow it to cool slightly while preheating the oven to 200°C.
- Once cool enough to handle, remove the skin from the gammon and score the fat. Place the gammon on a baking tray and into the oven to crisp the fat. This should take about 15 minutes.
- Remove the gammon from the oven and spoon over the glaze. Return the gammon to the oven for 5 minutes, then remove, reglaze and return to the oven for another 5 minutes. Repeat this process until the gammon is well glazed. Allow the gammon to rest for 30 minutes, then slice and serve with extra glaze on the side.
