Fudgy chocolate cake
I never need a reason to make this cake, what I love most about it is how its texture and flavour increase day after day, not that it will last for days.
Fudgy Chocolate Cake

Ingredients:
- 250g Woolworths Salted Butter
- 350g Woolworths 70% Cocoa Dark Chocolate Drops
- 6 Woolworths Free Range Large Eggs, separated
- ¼ cup Woolworths buttermilk
- 200g sugar
- 2T cornflour
- 2T vanilla extract
- 1T espresso powder
- Dark chocolate shavings
- Cocoa powder

- Preheat your oven to 140C. In a large microwave safe bowl add the butter and chocolate, then melt together in the microwave, cooking it on 30 seconds bursts, stirring each time before putting it back into the microwave until the mixture is perfectly smooth and combined. Set aside to cool for 5 minutes.
- Add the egg yolks to the melted chocolate and mix through before adding the buttermilk, sugar, cornflour, vanilla and coffee powder. Mix until all the ingredients are combined without any lumps.
- In a separate bowl, beat your egg whites until stiff peaks form then gently fold the egg whites into the chocolate mixture.
- Grease a 23cm springform tin before filling with the mixture. Bake for 50 - 60 minutes or until the outsides are set with the very centre being still a little wobbly and unset.
- Allow to cool completely before removing from the tin, as the cake cools the centre of the cake will set. Do not cut into the cake until its completely cooled and set.
- To garnish, shave some dark chocolate over the cake then dust with cocoa to give it some extra chocolate flavour and texture.
- Serve with your favourite ice cream or whipped cream.
