Fragrant coconut prawn curry

Ingredients:

Curry marinated prawns:

  • 2 T olive oil or vegetable oil
  • 500 g Woolworths Frozen Peeled Large Prawns, thawed
  • 500g Woolworths Frozen Extra Large Black Tiger Prawns, thawed and cleaned
  • 1 T ground turmeric
  • 1 T ground coriander
  • 1 T ground cumin
  • 2 T Woolworths Medium Curry Powder

Curry sauce:

  • 2 T olive oil or vegetable oil
  • 1 onion, chopped
  • Woolworths Chopped Ginger & Garlic, 1 cube of each
  • 2 stems curry leaves
  • 1 whole green chilli
  • 1 T Woolworths Medium Curry Powder
  • 1 t ground cumin
  • 1 T ground coriander
  • 1 t ground coriander
  • 2 x 400 g whole canned tomatoes
  • 1 cup coconut cream or milk

To serve:

  • Homemade tomato and red onion sambal, to serve
  • Sliced green chilli, to serve
  • Fresh coriander, to serve
  • 2 x 250 g Woolworths Fully Cooked Coconut Jasmine Rice

Eat with:

  • 1 x 18-pack Woolworths Mozzarella Arancini
  • 1 x 150 g Woolworths Mini Chicken Koftas
  • 1 x L Woolworths Orange Juice
  • 1 x 300 g box Woolworths Rose Flavoured Turkish Delight
  • 1 x 10-pack Woolworths Mini Chocolate Eclairs

Cooking instructions:

  1. Before you make your curry sauce, add the prawns to a bowl and marinate with ingredients.
  2. Soften the onion in oil over a medium to low heat in a large shallow pan, after 5 minutes add your garlic, ginger, and spices, with spices and a halved fresh chilli.
  3. Allow to sizzle for a minute before adding a splash of water. Fry the spices for a further 3 – 5 minutes until the water evaporates and the spices have been cooked off.
  4. Add the canned tomatoes and simmer for 20 minutes. Crush the tomatoes and add your coconut milk, season to taste and simmer for another 10 minutes.
  5. Poach the large peeled prawns in the sauce for 5 – 7 minutes before serving.
  6. In another pan, fry your extra-large tiger prawns for 2 – 3 minutes a side until cooked through and delicious. Spoon on top of your curry with chopped fresh coriander, sambal and green chillies to serve.
  7. Eat with all of your favourite Woolworths savouries like mozzarella arancini, samoosas, chicken skewers and finish off with a delicious little chocolate éclair and rose-flavoured Turkish delight.
