Easy Caprese Pizza & Creamy Gorgonzola Gnocchi

Ingredients:
For the pizza dough
- 580 g Woolworths Cake Wheat Flour
- 2 t Woolworths Instant Dry Yeast
- 1 T sugar
- 1 ½ t salt
- 330 ml tepid water
- 3 T Woolworths Mediterranean Extra Virgin Olive Oil
- Mix tomatoes, sliced and quartered
- 1 T Woolworths Balsamic Vinegar of Modena – IGP Aged – 5 grape
- 2 T Woolworths Mediterranean Extra Virgin Olive Oil
- Salt and pepper, to taste
- 2 T Woolworths Fresh Basil, chopped
- ¼ cup tomato puree
- 4 T Woolworths Italian Parmigiano Reggiano Cheese
- 1 Woolworths Burrantina Mozzarella, torn
- 2 T Woolworths Basil Pesto
For the marinated tomatoes:
Cooking instructions:
- Place flour, salt and sugar in a mixing bowl and whisk to combine. Add the yeast and mix. Add the water and olive oil and knead until a smooth dough is formed.
- Place in a warm spot covered until doubled in size. Knock back and shape into pizzas.
- Make the marinated tomatoes: Combine all the ingredients together in a bowl and set aside.
- To make the pizzas: roll or stretch the pizza dough, spread tomato puree over the basil and a drizzle of olive oil. Top with grated Parmesan and Bake.
- When the pizza is baked, scatter over marinated tomatoes and top with torn Mozzarella. Drizzle with basil pesto and balsamic vinegar.
