Crispy rotisserie chicken sandwich

Crispy rotisserie chicken sandwich

Ingredients:

For the filling:
200 g Woolworths Rotisserie Chicken, torn into chunks
¾ cup Woolworths Tangy Mayonnaise
4 T sriracha
4 T spring onions, finely sliced
4 slices Woolworths White Sandwich Bread
3 free range eggs 
100 g Woolworths Asian Panko Breadcrumbs
Oil for shallow frying 

Cooking instructions:

  1. Combine the chicken, mayonnaise, sriracha and chives before spooning a generous amount over 2 slices of bread. Cover with the remaining bread to form the sandwich. 
  2. Beat the eggs in a large, wide bowl, add the panko to a second large, wide bowl. 
  3. Dip the sandwich into the egg mixture then into the panko, repeating the process to the other side of the sandwich, coating both sides. Set the sandwiches aside while preheating the oil then shallow fry. 
  4. Add the sandwich and fry until the crumb becomes golden and crisp, turn over and fry the other side in the same manner. 
  5. Place the sandwiches on absorbent kitchen paper and cool slightly before cutting and serving.
