Classic Christmas with Minki

1. Gammon with apple and maple glaze
Serves 4-6
Preparation: 15 mins
Cooking: 4 hours

Prepare gammon as per packaging instructions.

 

2. Fig and apple duck
Serves: 4
Preparation: 15 mins
Cooking: 60 mins

Ingredients: 1 duck | 4 apples halved | 3 T brown sugar | 3 T butter | 3 - 4 red onions, quartered | 3 T olive oil
Method: Prepare the duck as per packaging instructions. To make the apples, heat the sugar and butter in a frying pan, add the apples flesh-side down and cook over a medium heat for 10 minutes, turning over once until slightly soft and caramelised. To make the onions, place in a frying pan with the oil and cook slowly for 20 minutes. Serve the duck with toffee sauce, and toffee apples and onions.

3. Pumpkin fritters
Serves: 4
Preparation: 0 mins
Cooking: 15 mins

Ingredients: 8 cloves garlic, peeled and thinly sliced | 4 T oil | salt
Method: Fry garlic until crispy, drain on paper towel and set aside | Prepare the pumpkin fritters as per packaging instructions, top with accompanying sticky cinnamon syrup adn serve with crispy garlic.
 

 

Brussels sprouts with miso butter

Serves: 4
Preparation: 5 mins
Cooking: 15 minutes

Ingredients: 3 T butter | 1 T miso | ¼ cup olive oil | 10 garlic cloves, crushed | 700 g brussels sprouts, blanched | 1 T olive oil | salt to taste
Method: For the miso butter, whisk the miso and softened butter together until completely combined. For the crispy garlic, heat up the olive oil on medium heat, add the crushed garlic cloves. Cook until the garlic cloves are crispy and caramelised. For the brussels sprouts, add olive oil to a pan on medium heat. When oil is warm, add the brussels sprouts and fry for 5-10 minutes until slightly caramelised. Season with salt to taste. Top with melty miso butter and crispy garlic before serving.

Mashed potatoes

Serves: 4-6
Preparation: 0 minutes
Cooking 15 minutes

Ingredients: 1 kg Woolies frozen mash | 1 punnet chives | Christmas nut and seed sprinkle
Method: Prepare the mashed potatoes as per packaging instructions, top with finely chopped chives and nut and seed sprinkle.

Ultimate Chuckles trifle

Serves: 6-8
Preparation: 15 mins
Cooking: 0 minutes

Ingredients: 1 Chuckles cake | 1 packet Chuckles solos | 1 tub Chuckles ice cream | 1 Chuckles trifle | edible gold shimmer dust
Method: Arrange slices of Chuckles cake and scoops of Chuckles ice cream on a platter. Dust the Chuckles solos in gold shimmer and top the dessert with them. Serve with the Chuckles trifle.
