Cinnamon apple rolls
Say hi to your new weekend project, apple cinnamon buns! Made with the sweetest apples and some dough, these apple rolls will have your family coming back for more.

Ingredients:
For the filling:
- 4 Woolworths Flavourburst™ Envy™ Apples, peeled and diced
- 2T Woolworths Salted Butter
- ½ cup light brown sugar
- ½ t Woolworths Finely Ground Cinnamon
- Big pinch of salt
- 1 T cornstarch
- 100g of pecan nuts, chopped
- ½ cup Woolworths Salted Butter, room temperature
- 1¼ cups light brown sugar
- 2T Woolworths Finely Ground cinnamon
- 1 cup (250 ml) icing sugar
- 1T (15 ml) lemon juice

Cooking instructions:
- Mix the milk, half the sugar and yeast in a medium size bowl and stir to combine.
- Leave for 10 minutes or until foamy.
- Tip the flour, salt and remaining sugar into a stand mixer with a dough hook and quickly mix to combine.
- Pour in the frothy milk and eggs and mix on low for 2 to 3 minutes, then increase to a medium speed and mix for 5 minutes.
- While you are mixing, add the butter, bit by bit, making sure each piece is incorporated before adding the next piece.
- Mix for another 7 minutes or until the dough is smooth, soft and elastic.
- oll into a ball and pop into a large bowl.
- Cover with clingwrap and leave to prove overnight in the fridge.
For the brioche:
- Melt the butter in a pan,add the apple, sugar, cinnamon and salt and cook for 5 minutes, or until the apples are tender.
- Stir through the cornstarch and cook for another minute. Leave to cool.
To make the filling:
- Mix the butter, sugar and cinnamon together.
To make the cinnamon butter:
- Roll the dough out onto a lightly flour surface, into a rectangle of roughly 60 cm x 40 cm.
- Spread the cinnamon butter over the dough.
- MSpoon over the apple filling and scatter with nuts.
- Roll up the dough into a long sausage.
- Cut into half and then each half into 4.
- Place on a lined baking dish, cut side up, leaving a little space for the buns to rise.
- Lightly cover with cling wrap or a cloth and leave to rise for 45 minutes.
- Place in a preheated 180ºC oven and bake loosely covered with foil for 15–20 minutes.
- Remove the foil and cook for a further 15 minutes or until brown.
- Leave to cool for 15 minutes then mix the glaze ingredients together and drizzle over.
