Cherry poptails
Try these delightful cherry poptails made with fresh cherries, cherry syrup, sparkling rosé, and creamy vanilla ice cream—an ideal treat for summer!

Serves: Makes ½ cup of cherry syrup

Ingredients:
For the cherry syrup:
- 400 g cherries, halved and stoned
- ½-1 cup water
- 2 T caster sugar
For the cherry poptails:
- 200 g cherries, halved and pitted
- 6 x 200 ml cans Lemonade Sparkling Flavoured Drink
- 740 ml De-Alcoholised Sparkling Rosé
Method:
Cherry syrup:
- Place all the ingredients in a pan and simmer for 5–10 minutes, adding a little more water if necessary.
- Allow to cool, then strain through a fine sieve over a jug. Mash the cherries in the sieve to get the most flavour and juice.
Cherry poptails:
- Place 1 t cherry syrup into each mould of a silicone ice tray or into popsicle moulds. Top with a few halved cherries and fill with water. Add ice cream sticks or skewers, then freeze to set.
- Serve in large glasses, top up with non-alcoholic sparkling rosé and garnish with fresh cherries.
