Cherry poptails

Try these delightful cherry poptails made with fresh cherries, cherry syrup, sparkling rosé, and creamy vanilla ice cream—an ideal treat for summer!

Ingredients:

For the cherry syrup:

  • 400 g cherries, halved and stoned
  • ½-1 cup water
  • 2 T caster sugar

For the cherry poptails:

  • 200 g cherries, halved and pitted
  • 6 x 200 ml cans Lemonade Sparkling Flavoured Drink
  • 740 ml De-Alcoholised Sparkling Rosé

Method:

Cherry syrup:

  1. Place all the ingredients in a pan and simmer for 5–10 minutes, adding a little more water if necessary.
  2. Allow to cool, then strain through a fine sieve over a jug. Mash the cherries in the sieve to get the most flavour and juice.

Cherry poptails:

  1. Place 1 t cherry syrup into each mould of a silicone ice tray or into popsicle moulds. Top with a few halved cherries and fill with water. Add ice cream sticks or skewers, then freeze to set.
  2. Serve in large glasses, top up with non-alcoholic sparkling rosé and garnish with fresh cherries.
