Casual Christmas with Minki

Ingredients: 1 pork loin roast | 350 g green beans | 1 T olive oil | lemon juice to taste | salt to taste | pepper to taste
Method: Prepare the pork loin roast as per packaging instructions, while that is cooking, fry the green beans in the olive oil, finish off with lemon juice and seasoning. Serve with hot pork loin.
2. Chicken latticed Parma ham served with vino cotto baked grapes and ClemenGolds®
Serves: 4-6

Cooking: 45-60 mins
Ingredients: 1 whole chicken | 1 packet Parma ham | 1 punnet red grapes | 2 ClemenGolds®, halved | 3 T vino cotto | 3 rosemary sprigs | 1 T caper berries
Method: Prepare the chicken by layering the Parma ham over the skin in a crisscross-like pattern, place into a baking tray with the grapes, ClemenGolds®, rosemary and caper berries and bake for 45 mins to an hour until crispy and golden brown.
3. Duck fat roast potatoes
Serves: 4 - 6
Preparation: 10 mins
Cooking: 45 mins
Ingredients: 8 potatoes | 550 g duck fat | maldon salt and pepper to taste | a few rosemary sprigs
Method: Preheat oven to 200ºC. Peel and quarter potatoes. Boil potatoes in a pot of water for approximately 10 minutes or until al dente. Strain water from potatoes and place potatoes on an oven tray. Rub surface of potatoes with duck fat ensuring they are fully covered, and season with Maldon salt and cracked black pepper. Place tray in middle of oven and cook for 45 minutes till golden brown. Remove and gently break the potatoes using a fork. For ultimate crispiness and flavour, garnish with rosemary or sage and finish by grilling for 15 minutes.
