Broccoli salad with bacon biltong
Broccoli often gets a bad reputation for being a boring vegetable, but this salad is anything but! Forget bacon bits – the smoky, rich bacon biltong adds a whole new depth of flavour to this salad.

Ingredients:
- 230 g Tenderstem broccoli
- 1 Woolworths red onion, thinly sliced
- 50 g cashew nuts, roasted
- 50 g Woolworths focaccia croutons
- 50 g Woolworths chilli smoked pork bacon biltong
For the dressing:
- 6 T Woolworths Extremely Creamy mayonnaise
- 1 garlic clove, finely grated
- 1 Woolworths LemonGold®, zested and juiced
- 1 T Dijon mustard
- 2 T Woolworths Mediterranean extra virgin olive oil
- sea salt, to taste
- freshly ground black pepper, to taste
Cooking instructions:
- Blanch the broccoli in boiling water for 1–2 minutes, then drain and rinse under cold water to stop the cooking process. Roughly chop and place in a bowl.
- Add the red onion, cashew nuts and croutons.
- To make the dressing, whisk together the mayonnaise, garlic, lemon juice and zest, mustard, olive oil, salt, and black pepper until smooth.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with chilli bacon biltong and serve.
