Best ever Nicoise Tuna Salad

Ingredients:
- 700 g Baby potatoes, boiled
- Thyme, to sprinkle
- Sea salt and freshly ground black pepper, to season
For the salad:
- 2 x 170 g cans Woolworths Light Meat Tuna Shredded, drained
- 150g Woolworths Fine Green Beans, blanched
- ½ red onion, thinly sliced
- 200 g Mini cucumbers
- 50 g Woolworths marinated white anchovies
- 350 g Woolworths exotic tomatoes, sliced
- Woolworths nut and seed sprinkle sachet, 35g
For the dressing:
- 1 T Dijon mustard
- ½ lemon, juiced
- ½ garlic clove, grated
- ¼ cup Olive oil
- 2 t Honey
- Sea salt and freshly ground black pepper, to season
Cooking instructions:
- Preheat the oven to 220C°.
- Crush your boiled baby potatoes on a baking sheet, drizzle with olive oil, thyme and seasoning and roast in the oven for 40 minutes or until golden and crunchy.
- Arrange salad ingredients together on a platter and drizzle with oil. Season with the Woolworths nut and seed sprinkle. Add potatoes over the salad.
- Make your dressing by combining all of the ingredients together. Adjust flavours to your preference and drizzle over the salad and potatoes. Toss lightly and serve.
