Best ever make-ahead Mediterranean salad

Cooking time: 1 hour 30 minute 
 

Ingredients:

  • 100g Woolworths Baby Butter Lettuce, Rocket and Basil Mix
  • 1 English cucumber, half peeled, half thinly sliced
  • 50 g Woolworths Spring Onion, sliced
  • 1 Woolworths Yellow Pepper, Diced
  • 200g Woolworths Rainbow Slaw
  • 350g Woolworths Exotic Tomatoes, sliced
  • 250g Woolworths Red and White Quinoa, cooked
  • Olive oil
  • Lemon juice
  • 6 Woolworths Baby Marrows, shaved into ribbons
  • 300g Woolworths Halloumi, diced
  • 4 T Olive oil
  • Sea salt and freshly ground black pepper, to serve
  • Lemon wedges, to serve

Cooking instructions:

  1. Combine the leaf mix, cucumber, spring onion, yellow pepper, rainbow slaw, tomatoes and quinoa. Drizzle with olive oil and lemon juice to serve, season to taste and set aside. 
  2. Alternatively dress with Woolworths Basil and White Balsamic Dressing. 
  3. Thread the baby marrow ribbons onto skewers, season and grill on a hot griddle for 30 seconds a side. Then grill the halloumi, squeeze more lemon juice over both. Toss the baby marrow ribbons in olive oil and salt to coat, and do the same with the halloumi blocks.
  4. Serve the salad with grilled lemony baby marrow skewers and crunchy halloumi.
