Berry and yoghurt overnight oat pudding

Berry and yoghurt overnight oat pudding

Serves: 4
Preparation time: 10 minutes plus overnight chilling
Cooking time: 1 minute 

 

Ingredients:

  • 120 g Woolworths Rolled Oats
  • 2 cups Woolworths Double Cream Plain Yoghurt
  • 1 cup milk
  • 50 g Woolworths Breakfast Mixed Seeds
  • 300 g Woolworths Berry Duo
  • 200 g Woolworths strawberries
  • 2 T Honey
  • Juice of half a lemon

Cooking instructions:

  1. Place all the ingredients into a bowl except for the berries, honey and lemon, and stir to combine. 
  2. Quarter the raspberries and fold through the oat mixture. Cover and chill overnight. The next day, divide among 4 glasses. 
  3. To make the topping, place the strawberries in a bowl. Add the honey and lemon juice and microwave for between 30 seconds and a minute. 
  4. Toss and allow to cool. Serve the raspberry oat puddings topped with fresh blueberries and sticky strawberries and their juices. Serve immediately.
