Banana oat flapjacks with date caramel and berries

Ingredients:

  • 1 ripe banana
  • ¼ cup Woolworths Rolled Oats
  • 2 free-range eggs
  • 1 T Macadamia Nut Butter
  • 1 t cinnamon 
  • pinch of salt
  • For date caramel: 
  • 6 – 10 pitted Dates
  • 1 T – 2 T warm water

Cooking instructions:

  1. In a bowl, mash the banana with a fork until smooth. Add oats, eggs, nut butter and cinnamon, salt. 
  2. Whisk all together until all incorporated. In a medium pan, heat oil, fry off tablespoon at a time over a low heat until golden on each side. They are fragile so flip with care. 
  3. Blend together dates adding a little water at a time to form a paste consistency for instant caramel.
  4. Top your flapjacks with your choice of date caramel, yoghurt, berries and macadamia nut butter. Finish off with sunflower seeds.
