Abi’s Easy Tomato Jam

Sweet, tangy, and irresistibly jammy! This easy tomato jam pairs perfectly with toasted ciabatta and creamy goat’s cheese for a delightful snack or appetiser.

Ingredients:

  • 500 g Woolworths Cherry Tomatoes
  • 2 T Woolworths Mediterranean Extra Virgin Olive Oil
  • ½ t Maldon sea salt
  • 4 T Woolworths White Sugar
  • 1 t Woolworths Ground Cumin, toasted
  • Woolworths Bake at Home Ciabatta Bread, sliced
  • 1 Woolworths Garlic Clove
  • Chevin Goat's Full Fat Cheese, to serve
  • Woolworths Anchovy Fillets, roughly chopped, optional as a topping
  • Woolworths Fresh Mint, to garnish
     

Cooking instructions:

  1. Heat olive oil in a frying pan over medium heat. Add the cherry tomatoes and sea salt.  
    Cook, stirring occasionally, until the tomatoes soften and their juices release, about 10 minutes.
  2. Add the sugar and cumin and cook for another 10 minutes, stirring, until the mixture becomes thick and jammy.
  3. Toast the ciabatta. Once toasted, take a clove of garlic and rub it over the surface of the bread.
  4. Spread goat’s cheese on the toasted ciabatta and top with a generous dollop of tomato jam.
  5. Top with anchovies, if using, garnish with fresh mint and enjoy!
