Dreamy, creamy and utterly delicious, this green pasta is made with spinach, making it a great way to eat more veg!

15 minute creamy green pasta salad

Cooking time: 10 minutes

 

Ingredients:

  • 10 g Woolworths Fresh Basil
  • 1 garlic clove, crushed
  • 1 x 400 g can Woolworths Cannellini beans, drained
  • 3 T olive oil
  • Sea salt and freshly ground black pepper, to season
  • 100 g Woolworths baby spinach
  • Juice of a lemon
  • Parmesan, grated to serve

Cooking Instructions:

  1. Add the basil, garlic, beans, olive oil, seasoning and ½ cup of water to a blender and blend until smooth.
  2. Add the spinach and lemon juice to taste and blend again until sauce is vibrant green and smooth. 
  3. Cook the pasta and reserve 2 cups pasta water. Add the sauce to the hot pasta  with the pasta water and toss – this will help the sauce to coat the pasta and not become thick. 
  4. Add a handful or two of grated parmesan if you like and even a little green chilli. Serve hot.
