Ingredients:
- 10 g Woolworths Fresh Basil
- 1 garlic clove, crushed
- 1 x 400 g can Woolworths Cannellini beans, drained
- 3 T olive oil
- Sea salt and freshly ground black pepper, to season
- 100 g Woolworths baby spinach
- Juice of a lemon
- Parmesan, grated to serve
Cooking Instructions:
- Add the basil, garlic, beans, olive oil, seasoning and ½ cup of water to a blender and blend until smooth.
- Add the spinach and lemon juice to taste and blend again until sauce is vibrant green and smooth.
- Cook the pasta and reserve 2 cups pasta water. Add the sauce to the hot pasta with the pasta water and toss – this will help the sauce to coat the pasta and not become thick.
- Add a handful or two of grated parmesan if you like and even a little green chilli. Serve hot.
