Ingredients:
- 500 g Woolworths Prepared Butternut
- 150 g Woolworths Brussels Sprouts
- Olive oil, to drizzle
- Sea salt and freshly ground black pepper, to season
- 1 head broccoli, cut into florets
- 70 g vine tomatoes
- 1 bunch of beetroot
- 1 head garlic, halved
- 3 fresh rosemary sprigs Rosemary
- 70 g Woolworths Medium Fat Butter with Garlic & Herbs
- For the Dukkah chickpea grains
- 400g canned chickpeas, drained and rinsed
- 1 t linseed paprika dukkah
- 1 clove garlic, minced
- 250 g Woolworths 7 Grain Medley, microwaved
Cooking Instructions:
- Place the root vegetables which are your harder vegetables that take longer to cook, like your butternut and Beets on a large, lined baking tray.
- Drizzle with olive oil and season Roast at 200C° for 15 minutes
- Remove from the oven once they just start to caramelise, Cut broccoli into small florets, halve the Brussels sprouts and place on the baking tray along with the remaining prepared veggies and halved heads of garlic.
- Add a drizzle more olive oil and seasoning and the garlic butter and rosemary and lemon slices. Roast for a further for 20 – 25 minutes. Eat as is or load up with some of our favourite toppings like Dukkah chickpea grains.
- Garnish the veggies with mint, parsley and double cream Plain yogurt with your pan roasted grains and pickled onions. Delicious with wraps or Woolworths Rotisserie chicken.
- For the Dukkah chickpea grains
- Pan fry chickpeas until they begin to pop, add Dukkah fry for a further 2 minutes add garlic fry for 2 more minutes, fold through Woolworths 7 grain medley to warm through.
