The wine expert's guide to Merlot

Spier cellarmaster Frans Smit is an expert at making Merlot – it's his signature that you'll see on the premium Signature Merlot on Woolies' shelves. Here's why he thinks you should invest in a few bottles.

What makes Woolworths' Signature Merlot a great example of the grape variety?

Merlot is by definition a noble grape with bright berry flavours, a rounded mid-palate and velvety tannins. This wine is no exception. The fruit grows in the Darling region, which is well-known for producing bright, velvety wines with complexit and good ageing potential.

What is its ideal food match?

It's an excellent pairing for Karoo lamb with mint sauce and roast potatoes. The wine has bright fruit and good concentration, so it's able to absorb the rich flavours of the lamb. The subtle minty notes in the Merlot match very well with the subtle mint flavours of the sauce. I also recommend trying a filet mignon or, as a vegetarian option, consider brinjal lasagne with a Parmesan crust.

What's the best way to store a top wine like this?

Lie the bottle down in a quiet space where there is minimal movement at a stable temperature of 12-14°C. Under the right conditions, the Woolworths Signature Merlot can age well for up to ten years.

What is the ideal serving temperature for Merlot?

To get the most out of the wine in your glass, allow the ambient temperature to warm it to 16ºC for drinking.

Does the shape of the glass matter?

In my experience, a Merlot glass should have a broad base, a large bowl and taper slightly towards the top to concentrate the delicate bouquet of the wine.

For anyone who thinks they aren't a Merlot fan, why should they change their minds?

A great crafted Merlot shows beautifully nuanced berry flavours, followed by a smooth, rich mid-palate, finishing off with subtle dark chocolate and velvety tannins. It offers you a luxurious experience of note.
