You have to make these roast potatoes

These roast potatoes are crispy and crunchy on the outside and wonderfully fluffy on the inside – in short, they’re perfect.

Best-ever roast potatoes

Serves 8 
Preparation: 30 minutes 
Cooking: 1 hour 45 minutes

Ingredients:

  • 2.5 kg potatoes, peeled and halved
  • 3 T olive oil 
  • 100 g butter
  • Sea salt, to taste
  • Hardy herbs such as rosemary or sage
     

Method:

  1. Preheat the oven to 220C. Parboil the potatoes until a knife just pierces them. 
  2. Drain. 
  3. Place the oil and butter in the same saucepan and add the potatoes while they’re still steaming hot. Vigorously shake until the potatoes have roughened up around the edges, are coated in the butter and oil and have started to break slightly. This will ensure you get a lovely crispy golden crust.
  4. Place the potatoes into a large preheated oven tray and drizzle with a little more olive oil. Season with sea salt, add the herbs of your choice (rosemary or sage) and roast for 60–90 minutes until dark golden brown, turning once or twice for even roasting. Serve hot.
