Potato bake, but make it Mediterranean. We’ve taken some Mediterranean inspo and cooked up a gloriously fragrant potato bake loaded with vibrant flavours.

Mediterranean-style potato bake

Easy
Serves 4  
Preparation: 10 minutes  
Cooking: 50 minutes

Ingredients:

  • 2 T olive oil  
  • 2 red onions, peeled and sliced  
  • 2 cloves garlic, sliced 
  • Sea salt and freshly ground black pepper, to taste 
  • 1 x 180 g jar Woolworths Matboucha Sauce 
  • 2 x 700 g bags Woolworths Mediterranean or Apache Potatoes, boiled 
  • 240 g Woolworths Sun-dried tomatoes, juices reserved 
  • 280 g Woolworths Grilled Peppers
  • 200 g feta 
  • 10 g Italian parsley

Method:

  1. Heat the olive oil in a pan and add the onions. Cook until caramelised. Add the garlic and fry, then season with salt. 
  2. Add the matboucha sauce, then fill the jar with ½ cup water and pour into the pan.
  3. Crush the boiled potatoes and toss through the onions and sauce to coat. 
  4. Place in a baking dish and scatter over the sundried tomatoes, grilled peppers and feta. Season to taste and bake at 180°C for 20–40 minutes, or until golden brown. 
  5. Mix the chopped parsley with the reserved juice from the sundried tomatoes, then drizzle over the potatoes to serve.
