Simple and delicious lamb chops in the oven
We’ve got the lowdown on the perfect way to make lamb chops in the oven. And the best thing about this recipe is that’s ideal for anytime of week – a quick weeknight dinner or a lazy Sunday lunch.
Ingredients:
- 2 x 500 g Woolworths Free Range Lamb Loin or Rib Chops
- 25 g Woolworths Souvlaki Spice Kit
- 4–5 T olive oil
- 2 x 400 g canned butter beans, drained and rinsed
- 4 garlic cloves, sliced
- 200 g pitted olives
- 10 g sage, rosemary or oregano
- Sea salt and freshly ground black pepper, to taste
- Pink pickled onion, for serving
- Grilled lemon, for serving
Method:
- Preheat the oven to 180°C. Sear the chops in an ovenproof pan. Start fat-side down and let the fat render so you don’t need to use olive oil. This will also ensure crispy, golden fat. Make sure your pan is medium to hot, if it’s too hot it will shock the lamb and make it tough, and if it’s too cold the fat will not render properly.
- Once the chops are rendered, arrange them in single layer in a large baking tray or in the same pan you seared them in.
- Combine the souvlaki spice kit with the olive oil to make a paste. Generously spoon the spice paste over the chops.
- Add the butter beans, garlic, olives, sage, rosemary or oregano and place in the oven to cook for 10–15 minutes, or to your preference. Shake the pan occasionally to coat the beans in the pan juices. Serve hot with pink pickled onions and grilled lemon.
