This Tenderstem™-pasta bake is a vibe

We love an easy pasta bake and this one has the goods: lots of vibrant Tenderstem™ to get your veg in, and three types of cheese to hit that comfort-food sweet spot.

Tenderstem™-pasta bake

Easy
Serves 4
Preparation 10 minutes 
Cooking 30 minutes 

Ingredients:

  • 4 garlic cloves, finely chopped 
  • 1 chilli, sliced 
  • 200 g baby leeks, sliced 
  • 2 T olive oil 
  • 50 g butter
  • 400 g Tenderstem™ broccoli
  • 1 lemon, zested and juiced
  • 3 T Parmesan, grated
  • 250 g Woolworths Soft Ricotta
  • 250 g conchiglie pasta
  • Sliced mozzarella, to serve
  • Roasted cherry tomatoes, to serve

Method:

  1. Preheat the oven grill to 200°C. Soften chopped garlic and sliced chilli and leeks in 2 T olive oil and butter. 
  2. Chop up the Tenderstem™ broccoli and add the stems to fry for 2 minutes before adding the tops to fry for a minute. Remove from the heat and keep aside. 
  3. Cook the pasta until al dente and drain. In a large bowl, add the soft ricotta with the zest and the juice of the lemon, a drizzle of olive oil, and seasoning. Add the grated Parmesan and mix through. 
  4. Add half of the stir-fried broccoli to the bottom of a medium oven dish. Top with pasta, and the with remaining Tenderstem™ broccoli. Add slices of mozzarella and place under the grill for 5 – 10 minutes until the cheese is golden brown and melty. Serve immediately with warm roasted cherry tomatoes on the side.
