This Tenderstem™-pasta bake is a vibe
We love an easy pasta bake and this one has the goods: lots of vibrant Tenderstem™ to get your veg in, and three types of cheese to hit that comfort-food sweet spot.

Ingredients:
- 4 garlic cloves, finely chopped
- 1 chilli, sliced
- 200 g baby leeks, sliced
- 2 T olive oil
- 50 g butter
- 400 g Tenderstem™ broccoli
- 1 lemon, zested and juiced
- 3 T Parmesan, grated
- 250 g Woolworths Soft Ricotta
- 250 g conchiglie pasta
- Sliced mozzarella, to serve
- Roasted cherry tomatoes, to serve
Method:
- Preheat the oven grill to 200°C. Soften chopped garlic and sliced chilli and leeks in 2 T olive oil and butter.
- Chop up the Tenderstem™ broccoli and add the stems to fry for 2 minutes before adding the tops to fry for a minute. Remove from the heat and keep aside.
- Cook the pasta until al dente and drain. In a large bowl, add the soft ricotta with the zest and the juice of the lemon, a drizzle of olive oil, and seasoning. Add the grated Parmesan and mix through.
- Add half of the stir-fried broccoli to the bottom of a medium oven dish. Top with pasta, and the with remaining Tenderstem™ broccoli. Add slices of mozzarella and place under the grill for 5 – 10 minutes until the cheese is golden brown and melty. Serve immediately with warm roasted cherry tomatoes on the side.
