Say hello to this summer’s star salad: Tenderstem® slaw with easy amasi dressing

It’s light, it’s bright and it’s packed with flavour: this Tenderstem® slaw with amasi dressing will be your go-to salad this summer.

Tenderstem® slaw with easy amasi dressing

Serves 6 as a side
EASY
Preparation: 15 minutes

Ingredients:

  • 400 g Tenderstem® broccoli
  • Olive oil, for frying 
  • Woolworths Sriracha Chilli Seasoning, to taste
  • 2 x 300 g packs Woolworths Rainbow Slaw
  • 20 g parsley
  • 20 g coriander
  • 1 x 35 g pack Woolworths Nut & Seed Sprinkle
  • Olive oil, for drizzling  

For the amasi dressing, mix:

  • 1½ cups Woolworths Full Cream Maas
  • 150 g Woolworths Vegan Mayonnaise
  • 2 T Dijon mustard
  • 2 T honey
  • Salt, to taste 
     

Cooking instructions:

  1. Cook the broccoli in a hot pan with the olive oil and sriracha chilli seasoning until bright green and chargrilled. Set aside to cool. 
  2. To make the dressing, mix all the ingredients except the salt, then season.
  3. Place the slaw in a bowl, add the parsley and coriander and drizzle over the dressing. 
  4. Top with the chargrilled Tenderstem® broccoli and nut and seed sprinkle. Drizzle with olive oil.
