Cauliflower mac ‘n cheese with gammon
Leftover gammon, pasta or cauliflower? This great recipe gives them a second chance to shine – they may taste even better than they did before!

INGREDIENTS:
- 1 T olive oil
- 2 Woolworths Brown Mushroom Steaks, torn
- 200 g gammon, cooked and cubed or shredded
- 1 cup cream
- Sea salt and freshly ground black pepper, to taste
- 500 g penne, cooked
- 300 g Woolworths Easy to Cook Cauliflower Cheese (or leftover roast cauliflower)
- 200 g Woolworths Fresh Pour Over Cheese Sauce (if using leftover cauliflower)
- 75g Emmental cheese, grated
- 100 g Woolworths Crispy Onion Sprinkle
- Chives, chopped, for serving
- 5–6 salad onions, chopped
METHOD:
- Preheat the oven to 180oC.
- Heat the oil in a large frying pan. Add the mushrooms and stir fry until golden brown.
- Add the gammon and cream and simmer for 2 minutes. Season to taste.
- Place the pasta in a baking dish and top with the Easy to Cook cauliflower cheese. (If using leftover cauliflower, add the cauliflower and cheese sauce.)
- Add the mushroom and gammon mixture and sprinkle over the cheese. Bake for 30 minutes until bubbling and golden. Garnish with the onion sprinkle, chives and salad onions.
