How to make The Lazy Makoti’s steamed bread (dombolo / ujeqe)

It’s soft, fluffy and fragrant. Best served warm, dunked into tomato relish or stew.

INGREDIENTS:

  • 1 Woolworths Make Your Own Lazy Makoti Steamed Bread (Dombolo/Ujeqe) Kit 
  • 325 – 350 ml water

METHOD:

  1. Pour the dombolo mix and yeast from the kit into a bowl. Slowly add water while mixing with a spoon or using a stand mixer with the dough hook at a medium speed. Knead for 10 minutes by hand or 5 minutes in a stand mixer until the dough forms a ball and springs back when you press it.
  2. Grease the enamel pot, add the dough, cover with the lid and leave to rise in a warm place until doubled in size. 
  3. Remove the lid, then place the pot containing the dough into a larger pot half-filled with boiling water. Place on the stove over a medium heat, cover the large pot with its lid, and steam the dombolo until cooked. Do not remove the lid.
  4. Cook for 1 hour, or until a skewer comes out clean. If necessary, top up the boiling water but only during the last 30 minutes of the cooking time.
  5. Remove the enamel pot from the large pot and tip the bread out onto a board. Allow to cool for a few minutes.
  6. Serve warm with tomato relish, stew or other toppings.
