Honey balsamic pork chops

Honey balsamic pork chop

  • 4 bone-in pork chops
  • 1/4 cup flour
  • 3 sprigs thyme
  • 1 tbsp flour
  • 1 1tbs garlic
  • 1/2 onion, finely chopped
  • Method:

    • Season both sides of the pork chops generously with salt and pepper
    • Place flour in a plate and coat all sides of the chops with the flour and set aside.
    • Heat oil in a large pan over medium heat
    • Add the pork chops and thyme. Sear for 5 minutes on each side. Remove from pan and set aside.

    To make the honey balsamic glaze :

    • Whisk together balsamic vinegar, soy sauce, honey and flour
    • In the same pan reduce the heat and fry onion and garlic then add the balsamic mix and cook for 2 minutes stirring to prevent lumps.
    • Return the chops to the pan and cook another 2 minutes
    • Garnish with parsley.

    Pasta, tomato and pesto salad:

    • 2 cups Penne pasta, cooked
    • Exotic mixed tomatoes, halved
    • 4 tbsps pesto
    • 1 feta round, crumbled
    • 1/2 red onion, finely chopped
    • a handful of rocket/basil
    • 1/2 Mediterranean cucumber, diced
    • 1 tsp garlic
    • salt and pepper to taste

    Place tomatoes, onion, garlic, cucumber in a large bowl and toss.

    Add in the pasta and crumble the feta over. Toss well and sprinkle the pesto over.

    Serve or refrigerate up to one day.
