Honey balsamic pork chop
4 bone-in pork chops
1/4 cup flour
3 sprigs thyme
1 tbsp flour
1 1tbs garlic
1/2 onion, finely chopped
Method:
- Season both sides of the pork chops generously with salt and pepper
- Place flour in a plate and coat all sides of the chops with the flour and set aside.
- Heat oil in a large pan over medium heat
- Add the pork chops and thyme. Sear for 5 minutes on each side. Remove from pan and set aside.
To make the honey balsamic glaze :
- Whisk together balsamic vinegar, soy sauce, honey and flour
- In the same pan reduce the heat and fry onion and garlic then add the balsamic mix and cook for 2 minutes stirring to prevent lumps.
- Return the chops to the pan and cook another 2 minutes
- Garnish with parsley.
Pasta, tomato and pesto salad:
- 2 cups Penne pasta, cooked
- Exotic mixed tomatoes, halved
- 4 tbsps pesto
- 1 feta round, crumbled
- 1/2 red onion, finely chopped
- a handful of rocket/basil
- 1/2 Mediterranean cucumber, diced
- 1 tsp garlic
- salt and pepper to taste
Place tomatoes, onion, garlic, cucumber in a large bowl and toss.
Add in the pasta and crumble the feta over. Toss well and sprinkle the pesto over.
Serve or refrigerate up to one day.
