Our Best Ever Gammon

Our best ever fynbos gammon doesn't get better than this - Chef Scott Parker shows us how to make a delicious apple-braised gammon with a caramelised onion and crispy sage topping - perfect for your celebration!

INGREDIENTS

  • 1 Woolworths Our Best Ever Fynbos gammon
  • 500 ml 100% Apple and ginger fruit and vegetable juice blend
  • 2 onions, diced
  • 30 g fresh rocket
  • 40 g pick and mix watercress
  • 20 g cured sliced bacon nibbles
  • 20 g fresh sage, picked
  • 90 g pickled red onion petals
  • 2 whole star anise
  • 1 bay leaf
  • 2 tbsp salted butter
  • 4 tbsp Mediterranean Extra Virgin Olive oil
  • Maldon sea salt, to taste
  • Pepper, to taste

COOKING INSTRUCTIONS

1 Pre-heat your large frying pan with 3 tablespoons of olive oil over medium heat.
2. Once the pan is hot, add the picked sage leaves, season with salt and cook until crispy (approx. 90 seconds), remove and drain on a paper towel.
3. In the same pan, add the butter, diced onions and star anise and bay leaf, season with salt and pepper, cook until they turn golden brown (approx. 10– 12 min).
4. Then, add the apple juice and reduce by 2/3, you now have a great stock to warm your sliced gammon in.
5. Add the sliced gammon and warm gently. Once it has stood for 5 minutes it’s ready, you want to just add heat but not cook any further.
6. While this is warming, prepare the rest of the garnish. Season the rocket and watercress with a tablespoon of olive oil, a tablespoon of the pickled onion juice, salt and pepper and the pickled onions and mix well.
7. To dress, lay the sliced gammon on the base of the plate with a gentle covering of the remaining sauce, lay the salad on the top, followed by the crispy sage and bacon bits.

Chef’s tip: Use the leftovers for a great sandwich with our new focaccia bread and if you have any sauce left, this is a great
