Mature Brandy Pudding 900g

Citrusy, spicy and tipsy… everything a festive pudding should be!

Tipsy brandy pudding with ClemenGold® mandarins

Serves 4 to 6

Preparation: 5 minutes  
Cooking: 10 minutes 

INGREDIENTS

2 T butter, softened  
4 T maple syrup  
4 ClemenGold® mandarins, halved   
1 ClemenGold® mandarin​​, juiced   
2 T brandy, heated  
1 Woolworths Brandy Tipsy Pudding  
250 g crème fraîche  

COOKING INSTRUCTIONS 

  1. Melt the butter in a pan over medium heat. Add the maple syrup and heat until foamy. Add the 
    halved mandarins, flesh-side down, then add the juice. Cook until the fruit is just soft and golden 
    brown.
  2. Increase the heat to high, quickly add the warmed brandy to the pan and flambé.
  3. Heat the pudding according to package instructions.
  4. Place the warm pudding onto a serving platter.
  5. Serve with dollops of crême fraiche and the warmed mandarin halves. Drizzle with the sauce 
    from the pan.
