Roast turkey in a brown butter potato wreath

Serves 4 to 6

Ingredients:

  • 1 Woolworths BBQ Turkey
  • ¼ cup olive oil
  • BBQ glaze
  • 5 potatoes, thinly sliced
  • 10 g sage
  • Sea salt and freshly ground black pepper, to taste
  • ¼ cup butter, melted plus ¼ cup for the brown butter

Cooking instructions:

  1. Remove the turkey from the packaging, place in an ovenproof dish and drizzle over the olive oil. Roast at 180°C for 1 hour.  
  2. Remove from the oven and remove the net. Spoon over the BBQ glaze and roast for a further 40 minutes, basting every 10 minutes. Remove from the oven and rest for 10 minutes before slicing.
  3. Arrange the sliced potatoes in a circle in a cast-iron pan and scatter over half the sage. Season to taste and spoon over the butter. Repeat with the remaining potatoes and sage. Bake at 180°C for 45 minutes. Cover loosely with foil if they brown too much. Remove from the oven and invert onto a serving platter.
  4. Carve the turkey and arrange the meat in the potato wreath.
  5. Fry the remaining sage in 2 T butter until golden and nutty. Drizzle over the turkey and potatoes before serving.
