Make your own choc lamington kit
Makes 16 squares
Preparation: 10 minutes
Cooking: 25–30 minutes
Preparation: 10 minutes
Cooking: 25–30 minutes
Ingredients:
- 1 Woolworths Make Your Own Choc Lamingtons kit
Kit includes:
- 90 g desiccated coconut mix
- 140 g choc icing mix
- 310 g vanilla cake mix
You’ll need:
- 2 free range eggs
- 90 ml oil
- 100 ml full cream milk
- 20 g unsalted butter
- 150 ml boiling water
Cooking instructions:
- Preheat the oven to 170°C and grease a 21 cm square baking tin.
- In a bowl, beat the eggs, oil and milk. Add the cake mix and stir gently until well combined.
- Pour the batter into the tin and tap it on the counter 3–5 times to remove air bubbles. Bake for 25–30 minutes, or until golden brown and a skewer comes out clean.
- Cool in the pan for 5 minutes, then turn out on a cooling rack. Cool completely, then slice into 16 squares.
- Place the icing mixture in a shallow dish or plate. Add the butter and boiling water and stir until the icing has dissolved – it will be quite runny. Place the coconut in a separate bowl or plate.
- Dip the cake squares into the icing one at a time until well-coated – leave each side in the icing for 2–3 seconds before moving to the next side. Then, dip all sides of the cake into the coconut until well coated.
