Make your own choc lamington kit

Makes 16 squares
Preparation: 10 minutes
Cooking: 25–30 minutes

Ingredients:

  • 1 Woolworths Make Your Own Choc Lamingtons kit

Kit includes:

  • 90 g desiccated coconut mix
  • 140 g choc icing mix
  • 310 g vanilla cake mix

You’ll need:

  • 2 free range eggs
  • 90 ml oil
  • 100 ml full cream milk
  • 20 g unsalted butter
  • 150 ml boiling water

Cooking instructions:

  1. Preheat the oven to 170°C and grease a 21 cm square baking tin.
  2. In a bowl, beat the eggs, oil and milk. Add the cake mix and stir gently until well combined.
  3. Pour the batter into the tin and tap it on the counter 3–5 times to remove air bubbles. Bake for 25–30 minutes, or until golden brown and a skewer comes out clean.
  4. Cool in the pan for 5 minutes, then turn out on a cooling rack. Cool completely, then slice into 16 squares.
  5. Place the icing mixture in a shallow dish or plate. Add the butter and boiling water and stir until the icing has dissolved – it will be quite runny. Place the coconut in a separate bowl or plate.
  6. Dip the cake squares into the icing one at a time until well-coated – leave each side in the icing for 2–3 seconds before moving to the next side. Then, dip all sides of the cake into the coconut until well coated.
