Add some green to your diet this week with spinach. You don’t have to pull a Popeye and eat it plain, steamed and, well, dreary. This dynamic veggie is versatile enough to use in breakfast, lunch and dinner.
7 ways to enjoy spinach
- Our breakfast of champions: top wilted spinach with poached or scrambled eggs.
- Make a green smoothie: blend spinach, a frozen banana, almond butter, a pitted date, a few blocks of ice and water.
- An easy dinner time side: season steamed spinach with salt and black pepper, a drizzle of olive oil and a squeeze of lemon.
- Make spinach pesto: blitz spinach, parsley, pine nuts, parmesan cheese, garlic, olive oil, salt and pepper in your blender.
- An easy veggie dinner: sauté baby leaf spinach and slices of garlic in olive oil and serve on top of fresh pasta.
- Creamed spinach is great cold weather comfort food: in pot sauté onion and garlic, stir in cream cheese and milk. Stir in steamed spinach and season with salt and pepper.
- Replace the lettuce in your lunch-time salad with baby leaf spinach.
