Cooking: 20 minutes

Ingredients:

  • 1 .5 kg Woolworths Mediterranean, Red-skin or Apache potatoes boiled
  • 1 x 350 g pack Woolworths Baby Cucumbers
  • Olive oil, for drizzling

For the tzatziki-style dressing:

  • 1 cup Woolworths Double Cream Plain Yoghurt
  • 1 clove garlic
  • 1 lemon, zested and juiced (or to taste)
  • 10 g mint chopped

  • Fresh oregano or microherbs, to garnish

Method:

  1. Cook the potatoes in boiling water until tender, then drain and set aside.
  2. Grate half the cucumbers and drain them in a colander. Toss with a sprinkle of salt to draw out more liquid.
  3. Thinly slice the remaining cucumbers. Drizzle with olive oil and a squeeze of lemon juice then set aside.
  4. To make the dressing, blend all the ingredients until vibrant green and smooth.
  5. Arrange the potatoes on a plate, drizzle with the dressing and top with the cucumber and drizzle with more olive oil. Season liberally, garnish with herbs and serve.
