These gluten-free chicken schnitzel rolls are delicious

Shake up your dinner routine with these easy gluten-free chicken bahn mi rolls. Just another way we love to eat our schnitzels – and that spicy Asian-style veggie dressing is a total treat.

Gluten free Snitzel Banh mi buns

Ingredients:

  • 8 Woolworths Gluten Free Hot Dog Rolls
  • 700 G Woolies Gluten Free Chicken Schnitzels
  • 20 g fresh mint
  • 20 g fresh coriander
  • 1/3 cup rice wine vinegar
  • 1 t caster sugar
  • 1-2 T soy sauce 
  • 1 Mediterranean cucumber, sliced 
  • 100 g julienne carrots
  • 1 baby red cabbage, thinly sliced
  • Fresh chillies, sliced to serve
  • 1 garlic clove, crushed
  • 2 fresh limes
  • Spring onions or pink pickled onions, sliced to serve
  • Vegan mayo, to serve
  • Hot sauce like Sriracha, to serve

Method:

  1. Bake the chicken schnitzels for 30 minutes at 180C.
  2. Combine the garlic, chilli, cucumber, caster sugar, soy sauce and rice wine vinegar to make a dressing for the veggies. 
  3. Toast rolls in a warm pan. 
  4. Slice the warm chicken and divide between the rolls, add the dressed veggies on top and serve with fresh herbs, onions and chillies. Add a dollop of vegan mayo and hot sauce to taste.
