These gluten-free chicken schnitzel rolls are delicious
Shake up your dinner routine with these easy gluten-free chicken bahn mi rolls. Just another way we love to eat our schnitzels – and that spicy Asian-style veggie dressing is a total treat.
Gluten free Snitzel Banh mi buns

Ingredients:
- 8 Woolworths Gluten Free Hot Dog Rolls
- 700 G Woolies Gluten Free Chicken Schnitzels
- 20 g fresh mint
- 20 g fresh coriander
- 1/3 cup rice wine vinegar
- 1 t caster sugar
- 1-2 T soy sauce
- 1 Mediterranean cucumber, sliced
- 100 g julienne carrots
- 1 baby red cabbage, thinly sliced
- Fresh chillies, sliced to serve
- 1 garlic clove, crushed
- 2 fresh limes
- Spring onions or pink pickled onions, sliced to serve
- Vegan mayo, to serve
- Hot sauce like Sriracha, to serve
Method:
- Bake the chicken schnitzels for 30 minutes at 180C.
- Combine the garlic, chilli, cucumber, caster sugar, soy sauce and rice wine vinegar to make a dressing for the veggies.
- Toast rolls in a warm pan.
- Slice the warm chicken and divide between the rolls, add the dressed veggies on top and serve with fresh herbs, onions and chillies. Add a dollop of vegan mayo and hot sauce to taste.
