Try this strawberry and apple cobbler

We may be in the thick of winter but even so, strawberries are in season, and this wonderful fruit cobbler is bound to bring a sunny smile to your face.

Ingredients:

  • 2 pink lady apples, peeled and sliced
  • Strawberries 400 g, tops removed
  • Sugar 200 g
  • Butter 100 g
  • Flour 120 g
  • 1 t ground cloves
  • 1 t ground cinnamon
  • 1 t baking powder
  • ¼ t salt
  • ½ cup milk
  • 2 t vanilla paste
  • Desiccated coconut 40 g
  • Flaked almonds 100 g
  • 3 T icing sugar, for dusting

Method:

  1. Preheat the oven to 180° C.
  2. Place the sliced apple and strawberries into a baking dish and sprinkle with 3 T sugar. Toss to combine.
  3. Cube the butter and dot between the fruit.
  4. Combine the flour, remaining sugar, cloves, cinnamon, baking powder, salt, milk, vanilla paste and desiccated coconut. Mix well.
  5. Pour the batter over the strawberries and scatter with the flaked almonds.
  6. Bake for 20 minutes or until the batter is golden. Dust with icing sugar before serving.
