Your foolproof fish braai
There’s no need to fear the fish braai – all you need is a clean grill, a bit of patience and our foolproof and super-fragrant recipes.
1. Lemony hake
Hake on the braai is delicious, but this tender fish needs a little help to stay in one piece.
Wrap the hake fillet in blanched leek leaves. Add lemon slices, garlic and melted butter. Wrap again in foil (shiny side in) and braai for 35–45 minutes, turning often. Open up and present at the table in the foil and leeks.
2. Snoek for the win
Get creative by stuffing your snoek with: 3 sliced garlic cloves, 1 chopped chilli, half a sliced red onion, fresh thyme and 2 tablespoons melted butter. Close up the fish and carefully braai over medium to hot coals. For turning: wrap in foil or secure in a sandwich-style grid to turn.
Tip: Char lemons on the braai, to release juice for easy squeezing.
