1. The vegan

Exotic mushroom coconut curry

Pan-fry chopped ginger, garlic, chilli and lime zest in a glug of vegetable oil until fragrant. Add exotic mushrooms and fry for a bit. Add a can of coconut cream and sliced tofu and let simmer for a couple of minutes. Season to taste, add more grated lime zest, scatter with fresh coriander and serve with black rice. 

2. The vegetarian (and the low-carb lover!)

Whole roasted cauliflower with pomegranate

Drizzle a whole cauliflower with olive oil and season with spices like ground cumin, coriander, turmeric, curry powder and salt. Roast at 180°C for 45 minutes until tender (but still firm). Serve with yoghurt mixed with salsa verde and scatter with pomegranate rubies and pumpkin seeds.

3. The meat-lover

Salted caramel pork with baby fennel

Cook one Woolworths Christmas pork belly according to the instructions and cut into squares. Season baby fennel and drizzle with olive oil, then roast until tender. Make a salted caramel sauce: caramelise some sugar, then slowly add a cup of cream and stir. Season with black sea salt. Add squares of pork belly and stir to coat in the sticky sauce. Arrange the fennel on a platter, place pork belly squares on top and scatter with crackling.
