Presenting: the easiest little tarts you’ll ever make. These delightful bites of jam and coconut deliciousness can be in your belly in a flash, and the secret is: readymade puff pastry from the freezer section.
Ingredients:
- Desiccated coconut: 300 g
- Free range eggs: 2, separated
- Caster sugar: 4 tablespoons
- Woolworths All-butter Puff Pastry: 2 x 250 g sheets, thawed
- Chunky strawberry jam: 200 g
Method:
- Preheat the oven to 180°C and grease a shallow muffin tray with butter.
- Mix the coconut, egg whites and caster sugar until incorporated.
- Using a cookie cutter, cut 9 rounds out of each piece of pastry and place on the prepared tray. Top each piece with a spoonful of jam and a spoonful of coconut mixture, pinch the coconut mixture slightly so that it stays together.
- Bake for 15–20 minutes, until golden brown.
