Presenting: the easiest little tarts you’ll ever make. These delightful bites of jam and coconut deliciousness can be in your belly in a flash, and the secret is: readymade puff pastry from the freezer section.

Ingredients:

  • Desiccated coconut: 300 g
  • Free range eggs: 2, separated
  • Caster sugar: 4 tablespoons
  • Woolworths All-butter Puff Pastry: 2 x 250 g sheets, thawed
  • Chunky strawberry jam: 200 g

Method:

  1. Preheat the oven to 180°C and grease a shallow muffin tray with butter.
  2. Mix the coconut, egg whites and caster sugar until incorporated.
  3. Using a cookie cutter, cut 9 rounds out of each piece of pastry and place on the prepared tray. Top each piece with a spoonful of jam and a spoonful of coconut mixture, pinch the coconut mixture slightly so that it stays together.
  4. Bake for 15–20 minutes, until golden brown.
